Special Activities

Display Tasting

This program is for middle and high school students and gives them opportunity to taste and learn about seasonal produce. During the spring and fall, the catering and nutrition education teams work together to provide a cooking demonstration of a featured recipe. This dish is prepared during lunch time and students have the opportunity to sample it.

The catering team visits various school sites throughout the year and prepares hamburgers and hot dogs for students on their smoker trailer. This allows students and parents the opportunity to spend time together as they enjoy a picnic meal on the lawn.

Fresh Fruit and Vegetable Program

This program is for elementary students. It introduces new and unique fruits and vegetables to students. The fruit or vegetable of the day is prepared in the cafeteria and taken to students in their classrooms. Teachers pass it out to the students and provide them with a fun fact sheet about the produce.

Farm to Market

The child nutrition team hosts this field trip for third to fifth grade students. Children visit different stations that teach them how the foods they eat make it to the grocery stores. A few of the stations include:

  • An explanation of how milk is made, featuring a live dairy cow;
  • Live plants that the students get to take home, showing different ways that food is grown;
  • Tours through a mobile grocery truck; and
  • A lesson on the beginning stages of a fruit forest.

Future Chef

The Future Chef Challenge is open to third through fifth grade students. Our team picks ten student finalists out of the hundreds of applications submitted. Those finalists come together at a designated school to prepare their meals. They are accompanied in the kitchen by knowledgeable cafe staff as well as the catering team. A panel of judges chooses the winner based on taste, nutritional value, and presentation.

Lucky Lunch Month

Lucky lunch month is a promotion at elementary schools. During the designated month, a sticker is placed on the bottom of a tray. The student who finds the sticker on the bottom of their tray wins a prize from the cafeteria manager.

Healthy High School Challenge

This national event sponsored by Sodexo, encourages high school students to make healthy food choices. During the designated month, each high school earns points for every healthy meal, specific a la carte snacks, and specific beverages that are served. Prizes are awarded to high schools that earn the most points.

Sodexo Experience

Sodexo likes to celebrate our Team Tulsa employees who go out of their way to serve our students and schools.  This program is a great way to recognize those staff members or teams that are consistently going above and beyond.

Cabonara pasta with alfredo sauce

7 servings
preparation time: 25 minutes
cook temperature: 350 F
cook time: 20 minutes

1 quart & 1 1/4 cup water
3 1/2 oz uncooked whole grain rotini
1 tsp vegetable oil
1 pkg dry alfredo mix (1.6 oz)
pinch of salt
splash of lemon juice
6 oz. frozen peas & carrots, thawed
13 oz. diced ham
1/2 tsp parsley flakes
1 oz. grated parmesan cheese
black pepper, to taste

blue plate with pasta in alfredo sauce and peas and carrots and ham chunks

1 Bring water to a boil.
2. Add salt and stir water vigorously. While water is still moving, add pasta. Stir pasta several time to separate while water returns to full boil.
3. Once pasta has become al dente, around roughly 7-8 minutes, drain water thoroughly. Do not rinse with cold water. Add oil to drained pasta and toss gently to distribute oil. Set aside.
4. Prepare alfredo sauce according to package directions. Add garlic, lemon juice and black pepper to prepare sauce. Set aside and keep warm.
5. Placed diced ham in a medium-sized saute' pan and heat over medium-high heat, set aside.
6. In a large mixing bowl, combine each prepared item: rotini, ham, alfredo sauce and peas & carrots.
7. Top bowl with dried parsley.
8. Toss pasta lightly with tongs to distribute into a 9x12 non-stick baking dish.
Pasta will not be up to temperature at this point. Sprinkle parmesan cheese over the pan of pasta. Cover the pan tightly with plastic wrap and aluminum foil and place into 350 F oven for 20 minutes.
